Why a dozen? - The meaning of sending a dozen roses
It was the custom in old Europe when a man was to propose to a woman that he picked 12 roses to offer her. Each rose represented Gratitude, Sincerity, Happiness, Reliability, Love, Passion, Hope, Truth, Respect, Glory, Endeavour and Eternity and it meant “I vow all of these to you”. How romantic!
As a sign of acceptance, the woman would select the virtue she valued the most and give it back for him to wear on his chest. This is the origin of wedding bouquet and boutonniere (buttonhole). 
Why long stem?
Flowers borne on strong main stems and new shoots are larger and fuller with more nutrients and energy to support the blooms (apical dominance). These are the true long stems. Once these apical buds are removed, side growths develop with shorter, thinner stems. Long stem roses have longer vase life, too.
